My family eats a lot of tacos! Whether it’s shredded chicken, barbacoa, ground beef, or carnitas, one thing’s for sure – tacos are a family favorite!

I go all out with the toppings, too, making homemade pico de gallo, grating blocks of sharp cheddar or cojita, pickling jalapenos and onions, smashing avocados for homemade guac, and so much more! 

Though lettuce is always a taco topping staple for my fam, I’ve been mixing things up lately by making a Mexican-inspired coleslaw in place of traditional lettuce. That substitution led to the creation of this recipe.

Cilantro Lime Slaw

Serves: 4-6 as a side dish or way more as a topping

Prep Time: About 5 minutes

Total Time: <10 minutes

Ingredients:

  • 14oz bag of coleslaw mix
  • ¼ cup of cilantro, chopped (finely or roughly, whichever you prefer)
  • ½ cup of red onion, diced
  • ¼ cup of EVOO
  • 1/8 cup of lime juice
  • 1 tsp honey or agave (either work)
  • ½ tsp of sea salt
  • ¼ tsp of black pepper

Let’s do this!

  1. Prep onion by peeling the onion, washing, and dicing. Prep cilantro by rinsing and squeezing out any water (you can dry or pat down with a paper towel, if desired). Pull the cilantro leaves off of the thick base stem and chop the leaves. 
  2. In a large bowl (or I use a 8-cup/64oz size Tupperware container) whisk together the EVOO, lime juice, honey (or agave), salt and pepper. 
  3. Add the coleslaw mix to the dressing, stirring to combine (or if using a Tupperware container, place the lid on top and shake to combine). Add in the onion and cilantro and incorporate into the rest of the coleslaw mixture. 
  4. Enjoy!

Note: This slaw tastes best if served immediately.
